Flavoring Chemistry & Infusions

SWEETEN WITH INTENT

Store-bought commercial syrups lean on potassium sorbate, sodium benzoate, and synthetic artificial aroma chemicals that coat the tongue in grease-like sweetness. Real culinary coffee syrups are balanced solutions of sucrose, moisture, and gently extracted plant oils.

Real vanillin degrades when exposed to violent boiling. This overnight gentle steep retains delicate woody and floral aromatic notes.

  • 200g unrefined raw cane sugar
  • 200g filtered water
  • 1 whole Grade-A Madagascar or Tahitian vanilla bean
  1. Split the vanilla pod lengthwise with a sharp paring knife and scrape the caviar seeds out.
  2. Combine sugar, water, scraped seeds, and the empty pod in a saucepan over medium heat until sugar dissolves. Do not boil.
  3. Pour into a sterilized bottle and seal. Let infuse overnight at room temp before refrigerating.

A higher sugar-to-water ratio creates osmotic pressure that preserves the syrup naturally without preservatives, delivering toasted toffee depth.

  • 300g Demerara, Turbinado, or dark muscovado sugar
  • 150g pure water
  • 1 tiny pinch (0.2g) sea salt for mineral balance
  1. Heat water and sugar on medium heat until dissolved.
  2. Add pinch of salt to highlight chocolate notes and reduce perception of harsh bitterness in dark roasts.
  3. Cool and bottle. Perfect paired with oat milk iced lattes.

Avoid ground spices, which create chalky sediment in your drink. Whole cracked pods yield clean, luminous extraction.

  • 8 green cardamom pods, cracked gently
  • 1 true Ceylon cinnamon quill (cassia is too astringent)
  • 200g white cane sugar + 220g water (compensating for simmer loss)
  1. Lightly toast cracked pods in a dry pot for 45 seconds until fragrant.
  2. Add water, cinnamon quill, and sugar. Simmer on low heat for 10 minutes.
  3. Strain hot syrup through a fine tea sieve to catch all spice particles before bottling.
